Sweet Chili Salmon 

– Servers 5-6 people, Total cooking time 30 minutes

Ingredients 

6 Fresh Salmon Filet 5-6 ounces each (or any fish such as Salmon, Opah, Sea Bass, Mongchong)

1 tablespoon per filet of Sriracha Mayonnaise

Filling Ingredients

3 individual packages of Diamond Bakery’s Sweet Chili Soda Crackers

1 Garlic Clove, Minced

1 Lemon, zested

½ cup of Cilantro, finely chopped

3 tablespoons of melted Butter

2 tablespoon Sweet Chili Sauce

Salt & Pepper

Directions

Preheat the oven to 475°. Place all of your crust ingredients into a food processor and blend into a breadcrumb consistency. Next, cover a baking sheet with heavy-duty foil and spray with nonstick cooking stray. Season your fish with salt and pepper and coat the top with Sriracha mayo before generously adding your crust toppings. Confection bake in oven for 8-10 minutes or until desired doneness. Cooking time may vary depending on thickness of filet and type of fish. Serve this delicious fish with your favorite side dishes.
